Second bottle today 😁.
The first bottle of Fukushima, Aizumusume 😏.
When I opened the bottle... the sake-like alcoholic aroma is rather stronger than the ginjo aroma 😅. I guess😅
The first sip has a very smooth taste with a hint of bitterness, and a little bit of the piquancy of a pure sake 😆.
The sharpness is also well balanced without any unnecessary bitterness 👌... but the aftertaste is a bit strong 👌... but the aftertaste is a bit strong 👌.
...but the aftertaste is a little bit on the downside 😅.
Personally, I think it must be one of my favorites, but I'm not so sure if I'm addicted to it 💧.
If I were in Fukushima, I might prefer the instrument Masamune 🎷.
However, as all Sake-no-wa users know... the taste changes dramatically right after opening the bottle and after the second day! I'm sure many of you have experienced this... so I'll look forward to tomorrow's report 😁.

No change in aroma, the initial taste seems to have increased⬆️ but the rest of the taste did not change that much... I can still taste a bit of bitterness in the aftertaste😅This is delicious but I don't think I will repeat it 😭

Everyone's reviews on sakénwa were so good... I bought some 🍶.
The aroma is rummy and... peary, citrusy, and refreshingly sweet.
On the palate, there's a fine chili schwirl and a mild, gentle sweetness. Is the flavor still pear? It's still a bit firm, or maybe just a hint of mackie-ness. Pear and a bit of rummy, overall a soft and gentle sweetness.
When mixed, the aroma is rice and the mackie disappears. The soft bitterness reminds me of grapefruit, but I still think it's pear. The sweetness is soft and fluffy, and it finishes with a nice, tight bite.
The next day, it is rounder and even tastier. I think I like this one better.
The aroma is mild and mellow, and the aftertaste disappears beautifully ✨It doesn't leave a strong enough impression to be sharp, but it disappears cleanly and smoothly.
It was a delicious light nigori with a gentle sweetness and a clean aftertaste that reminded me of a snowy landscape, just like its name. ❄️

Was searching for more Shundei, but it’s sold at a different place. This is one of their rice from a single farm series; wonderful namazake.
Opened with a pop, savoury with a melon finish and spicy, not too dry and well balanced. From a single field at Katakado, Fukushima. Delicious Nihonshu and worth the trip!
Will try again a few days later to see how the flavour develops.
