The aroma is rich and mellow, and acidity appears with time.
The fizziness is strong, so it feels light, but the flavor itself has a deep sweetness like Nagano Purple, balanced by a good acidity.
The bitterness lingers briefly as an aftertaste, but it is not heavy, so it is perfectly balanced.
I haven't drank much San'in to Hokuriku sake, but there are many I like, and I still have a lot of training to do.
The liquor store owner told me about another brand of Gassan, a special sake.

The taste is fruity, soft, deep, sweet, and easy to drink without any snacks! Delicious!

This was probably the first time I have had Shimane sake. It had a fizzy, sweet fruity aroma like strawberry syrup or pineapple, with a strong sweet, sour, and umami flavor. It also had a bitter aftertaste and was delicious with a complex flavor.
