Tomonori Junmai Ginjo is from Gassan brewery, Yoshida Shuzo in Shimane. It seems to be the name of the president.
As you can imagine from the tag, it has a rich flavor. The bitterness, sweetness, and umami all assert themselves, but they are well balanced.
It was delicious with Japanese food.
Beer → Tomonori → Kasen → Enayama → Kawazuru → Kuheiji light nigori

I looked up what domestic sake brewing rice is,
I found out that it is "Sakanishiki," Shimane Prefecture's original sake rice, and this may be the first sake made with this rice.
My favorite liquor store often sells it, but maybe it's rarer than I thought? Gentle sweetness. I think I like it best when it is fresh and gassy on the first day.

The aroma is rich and mellow, and acidity appears with time.
The fizziness is strong, so it feels light, but the flavor itself has a deep sweetness like Nagano Purple, balanced by a good acidity.
The bitterness lingers briefly as an aftertaste, but it is not heavy, so it is perfectly balanced.
I haven't drank much San'in to Hokuriku sake, but there are many I like, and I still have a lot of training to do.
