On the way home from harvesting the spinach and chrysanthemum in my vegetable garden, I stopped by a liquor store and saw a collaboration sake between Kaze no Mori and Okunoto's Shirakiku! So I bought it. I opened the bottle today. The impression I got was that it was a mellow Kaze-no-mori. It is delicious. Junmai Daiginjo, unfiltered and unpasteurized. It is made from 100% Yamadanishiki that survived the disaster, and the rice polishing ratio is 50%. The alcohol content is 16% and Kanazawa yeast is used. We enjoyed it while chewing Komatsu kelp. We look forward to the original version.

One of the bottles ordered from Okuda, a sake boutique in Wajima City. It is delicious, bitter, refreshing, and light. It is different in that it is made with the original ultra-hard water from the Aburacho Sake Brewery and Kanazawa yeast, but it has more of the Kaze no Mori character than the sake made with the original recipe. So why not just go with Kaze no Mori, which is only half the price? But that's not the point. But that's the main purpose of brewing this sake, so we will enjoy it while hoping for the recovery of sake breweries in the Noto Peninsula.

Wishing you a speedy recovery 😌. Slightly sweet standing aroma with a chilli and silky gasiness, is it koji aroma? Mushroom, The airiness of a damp forest. The first time I opened it, I could feel the complexity, but after a few days of drinking, I could feel the gentle bitterness of greef-like flavor, and in the latter half of the bottle, I could feel the cherry and banana-like flavor. The second half has a sweet and sour taste like cherries and bananas. It was interesting. I am thankful that I can drink it well.

The fourth and final dry drink comparison is one of Noto's joint brewing support projects. Delicious! While the original version is "soft water and fire-brewed," the collaborative version is "ultra-hard water and raw sake" used by Kaze no Mori's Aburinaga Sake Brewery. Both sakes are made with Yamadanishiki that escaped the disaster. It's a collaboration, isn't it? Rice used: Yamadanishiki Polishing ratio 50%. Alcohol 16%.

Don't stop Noto's sake! This is a collaborative effort between Noto's stricken breweries and sake breweries from all over Japan, initiated by the Yoshida Sake Brewery in Tedorigawa. This time, Yoshida Shuzo of Hakuryu in Fukui brewed a bottle based on an original recipe by Shirakiku in Okunonoto. It has a strong throat from the delicious sweetness of the rice. The bitterness at the end is especially Shirakiku's. It is made from Gohyakumangoku and Yamadanishiki.

This sake is a reproduction of "Okunoto no Shirakiku Junmai Daiginjo (once-hired)" using "Kanazawa yeast" in cooperation with Aburacho Shuzo to keep Shirafuji Sake Brewery's sake that was damaged by the earthquake alive. It smells like bananas mixed with alcohol. It is almost colorless. Fine bubbles are spreading 😎. A powerful jump of acidity! Then freshness, followed by a hint of sweetness on the tip of the tongue: ☺️ And immediately, from the center of the tongue to the back, astringency and bitterness appear, and we enjoy the collaboration with the fresh sweetness remaining on the tip of the tongue. As you continue drinking and the temperature settles down, the sweetness becomes a little more pronounced. On the second day, after the acidity, the banana-like sweetness asserts itself strongly, followed by the bitterness. The aftertaste after drinking is very tasteful and relaxing 😉. As further days passed, the freshness spread with a very smooth mouthfeel, almost as if I was tasting fruit juice 😁. It is like a soft drink with no peculiarities at all😍.

The second edition of Noto's Sake to Stop Sake, brewed by the Shirafuji Sake Brewery in Wajima and the Aburacho Sake Brewery in Kaze no Mori, we thought it would be better to buy it from a liquor store in Wajima rather than get it directly on Makuake, so we ordered it from Sake Boutique Okuda. It has a very slight yellowish color and gasiness. It has a rather clean mouthfeel and acidity. It is fruity, but not too sweet, and has a moderate umami. As I drank it, fine bubbles gradually started to appear, and I realized that it had been brewed at Yucho. I had wanted this Shirafuji and Yucho sake since I heard about the matching of the second batch, so I bought it when I thought I would run out if I didn't buy it soon, but on the very day it arrived, Sake Boutique Okuda was flooded on the floor. It is not a quantity that I can buy immediately, but I will order again when the time comes. I will continue to pay attention to the Shirafuji, Nakajima, and Hiyoshi Sake Breweries so that they can all make a recovery. By the way, you were fire-brewed sake....

#Don't stop drinking Noto! My favorite local liquor store after a long time! I walked into the refrigerated area of the store and saw it right in front of me. A bag with a note at the beginning I made a decision immediately! Okunoto Shirakiku" brewed by Kaze no Mori (Kaze no Mori) Aburanaga Shuzo in Nara. The balance of sweetness and acidity is superb! Not too rich and you will drink it unconsciously. Naturally, the sake cup is Wajima-nuri. #Don't stop drinking Noto sake!

Okunoto Shirakiku#Kaze no Mori Collaboration Brew Don't stop #Noto's sake! Collaboration brew of #Noto! Yamadanishiki from Noto and Kanazawa yeast are used. Nama-sake brewed with super-hard water from Kaze no Mori. Sold by Shirafuji Sake Brewery and manufactured by Aburacho Sake Brewery. Serve cold. I was warned that there was a possibility that the bottle might blow open, but I was able to open the bottle without any trouble with only a short gasp. A few microbubbles adhered to the glass. The color is clear with a hint of color. The top aroma is fruity, with a grapefruit and melon feeling. The mouthfeel is full of gas, and the gas is strong in the mouth. The taste is sharp with a dry aftertaste, starting with an impression of sweet and sour acidity from the citrus sweetness. A sticky sweetness envelops the tongue in the middle of the taste, and the bitter and slightly astringent aftertaste finishes on the tongue. The dryness is sharp and lingers on the tongue with a tangy aftertaste. I asked the owner of the store where I bought it, "Is it like Kaze no Mori? Like Shirakiku from Okunoto?" He said, "It is just like Kaze no Mori. I think it's like Kaze no Mori for me too 🤔.
