While the original version is "soft water and fire-brewed," the collaborative version is "ultra-hard water and raw sake" used by Kaze no Mori's Aburinaga Sake Brewery. Both sakes are made with Yamadanishiki that escaped the disaster. It's a collaboration, isn't it?

Alcohol 16%.
Don't stop Noto's sake! This is a collaborative effort between Noto's stricken breweries and sake breweries from all over Japan, initiated by the Yoshida Sake Brewery in Tedorigawa.
This time, Yoshida Shuzo of Hakuryu in Fukui brewed a bottle based on an original recipe by Shirakiku in Okunonoto.
It has a strong throat from the delicious sweetness of the rice. The bitterness at the end is especially Shirakiku's.
It is made from Gohyakumangoku and Yamadanishiki.
This sake is a reproduction of "Okunoto no Shirakiku Junmai Daiginjo (once-hired)" using "Kanazawa yeast" in cooperation with Aburacho Shuzo to keep Shirafuji Sake Brewery's sake that was damaged by the earthquake alive.
It smells like bananas mixed with alcohol.
It is almost colorless.
Fine bubbles are spreading 😎.
A powerful jump of acidity! Then freshness, followed by a hint of sweetness on the tip of the tongue: ☺️
And immediately, from the center of the tongue to the back, astringency and bitterness appear, and we enjoy the collaboration with the fresh sweetness remaining on the tip of the tongue.
As you continue drinking and the temperature settles down, the sweetness becomes a little more pronounced.
On the second day, after the acidity, the banana-like sweetness asserts itself strongly, followed by the bitterness.
The aftertaste after drinking is very tasteful and relaxing 😉.
As further days passed, the freshness spread with a very smooth mouthfeel, almost as if I was tasting fruit juice 😁.
It is like a soft drink with no peculiarities at all😍.
The second edition of Noto's Sake to Stop Sake, brewed by the Shirafuji Sake Brewery in Wajima and the Aburacho Sake Brewery in Kaze no Mori, we thought it would be better to buy it from a liquor store in Wajima rather than get it directly on Makuake, so we ordered it from Sake Boutique Okuda.
It has a very slight yellowish color and gasiness. It has a rather clean mouthfeel and acidity. It is fruity, but not too sweet, and has a moderate umami.
As I drank it, fine bubbles gradually started to appear, and I realized that it had been brewed at Yucho.
I had wanted this Shirafuji and Yucho sake since I heard about the matching of the second batch, so I bought it when I thought I would run out if I didn't buy it soon, but on the very day it arrived, Sake Boutique Okuda was flooded on the floor. It is not a quantity that I can buy immediately, but I will order again when the time comes.
I will continue to pay attention to the Shirafuji, Nakajima, and Hiyoshi Sake Breweries so that they can all make a recovery.

Sold by Shirafuji Sake Brewery and manufactured by Aburacho Sake Brewery.

A sticky sweetness envelops the tongue in the middle of the taste, and the bitter and slightly astringent aftertaste finishes on the tongue.
The dryness is sharp and lingers on the tongue with a tangy aftertaste.

Shirafuji Sake Brewery evacuated the Honjozo and Junmai-shu (Neine) that was topped up at the end of the year to the only thermal tank that was still in operation, while it was damaged by the Noto Peninsula earthquake.
The sake was then shipped out and bottled by Yoshida Sake Brewery.
First, it was served cold.
The aroma is gently banana and melon, with a freshness like green bamboo.
It has a deep sweetness like caramel, a nuance of cypress, and a rice aroma like freshly pounded rice cake.
From the dark rice sweetness, along with the light stimulation of alcohol, a moderately gentle acidity spreads with a sense of plump rice flavor, fades away and finishes with a sharp finish.
