On January 15, the day before and the day after, both breweries rescued and removed the moromi in the process of fermentation. However, a total of approximately 2,000 liters of junmai and junmai ginjo moromi remained. The Shinzawa Brewery, which came from Miyagi, rescued the moromi, transported it to their brewery, and then topped up and bottled it. Normally, we do not combine moromi from different breweries.

The aroma is fresh with banana 🍌 as it is brewed with Kanazawa yeast. The sweetness is moderate with mild umami, moderate acidity and bitterness! Well balanced with a crisp yet mild aftertaste. Perfect as a food sake! This is delicious! A sake that you will never get tired of drinking. This is good.
There are still many delicious sake all over Japan that I don't know about. It's strange that I had this opportunity to meet them, but I definitely want to support them because they are brewing such delicious sake. This is one I want to drink again.
