Senzuke's popular seasonal sake, "Special Junmai White Koji Unfiltered Nama-shu," is made by filtering the unrefined sake must through a coarse filter and bottling it raw with a large amount of cloudy white oli, which allows the sake to continue fermentation in the bottle, resulting in a sparkling sake with a high carbon dioxide content.

I found this handsome bottle on a local liquor store's e-commerce site.
I was worried that I wouldn't be able to finish the bottle, but after a few days of thinking about it, I decided to pick it up 🤗.
Every time I open the bottle, the residual gas pushes up the stopper and the low sound is heard 😑! Even on the third day, microbubbles adhered to the glass and made it pizzle 🫧.
Rich koji aroma and sweet aroma reminiscent of cherry drop 🤧 It took me 5 days to finish it, but it was a delicious sake with the richness and chili of the original sake, even though it is 13 degrees C. 👍🏻
The third one, isn't it thicker than disposable chopsticks? The noodles were hand-rubbed to make them extra-thick and very satisfying 😋.

I like modern and my father is a classicist, and Senzuke was recommended to me when I requested a difficult requirement: fruity in that context!
There was definitely some bitterness, but I wanted more umami.
I think the sweetness was stronger than I expected.
I thought it might be a little difficult with Junmai Daiginjo, but I still believe in the possibilities of this request!

Unusual sake for the rocks.
The alcohol content is normal at 16%, but straight up, it is quite gutsy.
But when served on the rocks, Senzuke's typical sweetness stands out. The sweetness stands out.

Kake rice is Hyogo Sake85 -> Hyogo Nishiki
According to Mr. Ikoma's explanation, it is a four-stage brewing process using amazake (sweet sake).
When poured into a glass, a large amount of microbubbles appear.
It's a low alcohol at 13 degrees, but you don't feel it. Slightly effervescent, with a rummy sweetness.
No pungency at all.
Too easy to drink.
But the taste has changed so much after 3 days of opening the bottle...
