We finished the day with a super dry sake from Hyogo, our hometown 😋.
The third one is "Kido" and "Funaka Hachisaku" 😄.
Rice used: Hyogo-Nishiki produced in Hyogo Prefecture

Senzuke Junmai ROCK Unfiltered Nama Sake" by Izumi Shuzo
Senzuke Junmai ROCK is a pure sake made with a little more koji rice (22% koji ratio: 2% more than our company's) for the exclusive use on the rocks.
It is a raw sake made with a little more koji rice (22% koji ratio: 2% more than ours).
Ingredients Rice (domestic), Rice malted rice (domestic)
Percentage of koji used 22
Rice polishing ratio 65
Alcohol content 16
Rice used: 100% Yamadanishiki from Hyogo Prefecture
Yamada Nishiki and Hyogo Nishiki.
The richness of the umami.
Refreshingly sweet, with a slight acidity and a full-bodied umami flavor.
It is a summer sake.
So, this is the one I'm drinking today 🍶.
I went to visit Arima Onsen town and dropped by a liquor store, where I found an A4 poster right at the entrance of the store. I felt some kind of passion for it.
I told the shopkeeper, "I like dry sake," and he said, "This one is sweet," but I bought it. I bought it.
The result was okay ( ◜௰◝ )Sweet is also delicious 🤤.
It made me realize that I like sweet fruity sake with a fizzy taste.
I think it said something about a limited edition of 3,000 bottles on an A4 sheet of paper. I don't remember. I have a weakness for limited editions.

I drank the rest yesterday (2025/7/16) and it was very astringent. Of course, I left it chilled.
Is that how sake is supposed to be? I don't know.
Senzuke's third drink is a drop of water.
The same Junmai Daiginjyo but the Shizukutori has a deeper sweetness and umami 😍.
The acidity is also sharp, but the umami prevails.

The aroma is also moderate.
The mouthfeel is soft and the umami spreads more than the sweetness, and there is a firm and sharp acidity.

It is said to be only for drinking on the rocks, but I had it as a cold sake since it is not very high at 16 degrees.
