Only "Hyakunensui," natural water from the Hakusan foothills, and "Yamadanishiki," the highest grade of sake rice grown under contract, are used in the brewing of this sake. Junmai Daiginjo "Kanazawa," carefully brewed with traditional techniques, is a limited edition sake available only at the brewery.
The label motif, "Kaga Hachiman Kiagari," is a local doll familiar to people as a charm for good health and to ward off bad luck. A precious remnant painting by haiga artist Sunao Komatsu, who painted numerous works in Kanazawa from the Taisho to Showa periods and had a close relationship with Fukumitsuya.
