I stopped by Kawagoe over the weekend and bought some, shinshu shiboritate.
It is a new sake with a small number of sake. We are lucky.
It tastes fresh, freshly pressed. It tastes fresh and freshly pressed.
You can gobble it up by itself.

This is the second of two bottles I recently purchased for Koedo in Kawagoe.
Like the earlier Orikarami, it is a robust umakuchi type. I wonder if this is a characteristic of the sake rice (sake musashi) 🤔.
It might be good warmed up or heated (I'm not a big fan of warm sake, so I choose cold sake only 😅).
Is it the same sake as the sake made from 100% sake brewery, Toki cup?
It is a light, easy-drinking sake with a very tasty aftertaste, and it goes down very well. It is a good sake to drink with food. The aroma is slightly floral.
The liquid is almost colorless and has many short legs.

Kagamiyama Ooragarami, one of two bottles we purchased on a recent visit to Koedo, Kawagoe, Saitama Prefecture.
It is fruity but also has a firm umami flavor. Maybe it is because of the sake's tailing?
Accompanying it was Miso Sansho Cream Cheese purchased at Cardi's. I guess it's because they are both fermented foods, but they go well together. ☺️
Today is my wife's family's annual New Year's visit to the Naritasan Betsuin temple in Kawagoe.
Kagamiyama Oorigarami from Kawagoe's Koedo Kagamiyama Sake Brewery.
I walked with my father-in-law through the streets of warehouses to the Matsumoto Soy Sauce store and bought some.
It comes in softly and has a mellow, "delicious" taste, but not too sweet.
It is glossy, yet calm.
Every time I drink it, I end up drinking a lot of sake and end up drinking a four-gouple bottle, which I think means it is delicious👍.
Every time, I finish it on the first day, so maybe the taste will open up on the second day or later 😅.
