Fairly dry with a nice bit of acidity. Pear, lime, coconut, raw almond.
There’s just a tiny hint of sweetness but it isn’t too strongly dry either. Love the bit of acidity on this and the bright fruity flavors.

Deep and slightly savory, but with a good light sweetness. Honey roasted almond, pear, mushroom, stone. Nutty and a little earthy. A hint of saline, faint acidity.
Really nice, slightly spicy alcoholy burn. Gentle bitterness.

I think it is a very major sake in Nara, but this was the first time I drank Shinomine as far as I can remember.
Fruity ginjo aroma flavor, maybe a rather dry sharpness at the end.
It was delicious.

The first strong umami and the lingering aftertaste are so perfect that you would think there is no other sake better than this.
You will never get tired of drinking this sake, and you can drink it again and again.
The aroma has the sweet aroma of unfiltered, unpasteurized sake that I prefer, and the taste is quaint and expands in the mouth as you drink it. I think it has been open for some time, but it was delicious.
