Since I went to Nara, I bought a bottle of Shinomine and took it home (≧▽≦). It is mild, bright, easy to drink, and delicious.......just like the image of Shinomine, it is a little carbonated and soft. The rice polishing ratio is 60% (I thought it would be lower), and it is hard to judge by the rice polishing ratio.
Today is the 28th, so I paired it with a Kentucky Chicken Day pack! The skin part was spicy and strong chicken, but the inside part was delicious and matched the shinomine just right!

Surprisingly, it has a sour aroma reminiscent of yeast,
The aroma of koji rice is also in it.
The rice juice tastes delicious!

The texture is thick and dense, but the acidity is also pleasant and crisp on the tongue.
This is an adult's juice that can be drunk quickly and easily.

Sharp taste. Sourness, umami, and astringency come through. It is described as "a sake with a rounded taste that has lost some of its sharpness after the fall," but for me, it has a bit of sharpness to it.
However, as a food sake, it is good as it resets the inside of the mouth while the umami flavor remains in the mouth!
It is a good sake for the fall season when one has a good appetite.

Aroma gorgeous and fruity.
Slightly carbonated and well-balanced in sweetness and acidity, with alcohol not felt as much as in the sake degree. A light sweetness lingers in the aftertaste.

Shinomine Azur Yamadanishiki Junmai Ginjo Unfiltered Nama-shu
The brewery is located in Gosho City, Nara Prefecture.
The rice is polished to 55% Yamadanishiki grown in Nara Prefecture.
This sake is brewed with Kyokai No. 6 yeast (Shinsei yeast).
A little white malted rice is used.
Gentle fruity aroma, soft
umami of rice, and refreshing citrus acidity,
Fresh and crisp finish.
