There was a bottle design of Shinomine that had a different atmosphere from the Shinomine we usually see, so I tried it.
Ise-Nishiki is Mie Prefecture's prized rice for sake brewing.
It is said to be the ancestor of Yamadaho, the mother of Yamada-Nishiki.
It was developed in Ise in 1860 from Yamato, a native rice, and was popular in the Kansai region for a while, but was no longer cultivated due to its tendency to fall over due to long sticks.
Motosaka Sake Brewery, which brews Hachibei sake, revived the cultivation of this rice as sake rice in 1991.
Since then, it has been brewed by other sake breweries, but I did not know that it was grown in Nara Prefecture.
This junmai sake is brewed with Ise-Nishiki produced in Nara Prefecture using Kyokai No. 6 yeast.
The appearance is pale yellow-green crystal.
The aroma is mild and sweet.

The year before last, when I drank KORE's Nigori-nagashi, it was the most delicious sake of the year. Last year, I couldn't find any Yamadanishiki Nigori-no-Nagori, and although I haven't found it again this year, I found a Sumi-nagori and bought it immediately.
The color is clear with a slight yellowish tinge. The initial aroma is a gorgeous one, typical of ethyl caproate. When you drink it, it has an apple and slightly pineapple-like aroma, which everyone likes. It feels light for a moment as it is refreshing and smooth on the palate.
The mild mouthfeel allows this aroma to really shine through. The sweetness fades out in the early to mid-palate as if it is passing the baton to the flavor.
The bitterness comes in at the end, and it is here where the depth and drinkability come into play.
The second or third day is when it really comes into its own, and the sake-like sensation becomes stronger, but it is still too good to be true! The nigorizumi from the year before last had a more vinegary taste, which was right in the middle of what I like, but I'm really happy that they are making a sake that I like so much in the capsule type! Shinomine is never a miss.
