Rich mellow umami-guchi taste with plenty of umami
205.6.18[Gurutonmi-Chigasaki] We met this sake again at a restaurant we visited for the first time at an event.
The aroma is subtle, but you can taste it. When you put it in your mouth, it tastes a little mellow and dry.
I think I can taste the "rich umami" after rolling it around in my mouth for a while. (I may be mistaken 😅).
I also had it hot. The flavor is so mellow and full that you can taste the umami of the rice.

Aroma: Fresh, almost orange-like aroma
Taste: Light taste with a slight sourness that quickly fades away. Recently, I often drink sake without snacks, so this kind of refreshing sake is very good!
Both rice and water are produced in Uonuma. Junmai-shu born in snow country. It has a rich umami flavor and a thick umakuchi taste. It is rare to find this much on a label. But the taste is... not fruity. It was rather refreshing. It was rich, but maybe not so characteristic.... For some reason, two drinks in a row today had little impact on me.
It is a light, dry Niigata-style sake with low acidity and a clean aftertaste, but it has a surprisingly rich balance that gives it a solid feel. It is interesting in a good sense that it is made by the Shirotaki Sake Brewery, but it is not like water.

Compared to Shirotaki Junmai-shu from the same brewery, the taste is in the same direction, but this one is more refreshing.
Uonuma is another brand of Shirotaki Sake Brewery of Kozen Nyosui. This is a food sake that allows you to taste the deliciousness of Uonuma rice.
