My wife's grandmother gave us a bottle of Shirataki Sake Brewery's summer-only ultra-harsh Uonuma.
She bought it for me at the end of the summer, knowing my taste (I like super-harsh), and it had been kept cold in the back of the refrigerator for a long time.
We enjoyed it with grilled iwana and amago (mackerel) that we had purchased in Shiga Prefecture.
It was a perfect evening.
The moment you put it in your mouth, you will feel a moderate sweetness, but with a strong aftertaste. It goes well with fatty fish
and chicken dishes.
Affordable Junmai sake, Uonuma. Strong yellowish taste. Sweet aroma. Sweet but not too sweet, a strong junmai sake. I served it cold, but I think I prefer it warmed. A good sake that can be drunk without being pretentious.
Purchased at a store at Echigo Yuzawa Station. It is quite dry and has great ability to enhance fresh fish. I enjoyed the luxurious sushi. A great sake that I would like to drink again.

Unfortunately, it was completely 'old', probably due to extremely poor storage conditions (at the dealership).
It had a strong sense of rice, and I could feel a glimpse of the rich dry taste, but the aftertaste was so uncomfortable that I gave up after one glass.
