This is a mizu-hashiroshi aged sake that has been laid down in a barrel.
It was purchased in October and enjoyed with a sip from time to time.
It is much lighter than AFS1975, which I used to love, but it reminds me of that texture.

At the HYOGO SAKE EXPO 2023, we were allowed to enjoy "Kamitaka", and this time we tasted "Nihon Kotama", a metamorphic sake that was the main attraction of the festival.
We were told to start with the first one, so we took it in order.
Nihon Soul Junmai Mizumoto-shikkuri.
It is easy to drink with a firm but calm acidity.
Bouken-san and I kept saying how delicious it was. We heard that many people come back to this place after drinking all of them 😁The warmed sake also has a great acidity.
Nihon Soul Junmai Namaizukashi Special II.
It has a strong sweet acidity and tastes good, but I think it's a bit too much 😅.
In the end, bouken seemed to like this one the best and I'm still convinced he's a pervert🤣.
Japanese Soul AGED BY THE SEASIDE Oak Barrel Aged
Akashi Whiskey from the outside. This is a sake made by aging Nippon Soul for a year and a half. The aroma is like Shaoxing sake. It's a little bit gruesome when you drink it😅It's supposed to be good warmed up, but I didn't go to the warming booth and haven't tasted it yet.
It is amazing that they can make such a variety of sake with the same rice polishing ratio of 70%, yeast No. 6, and alcohol content of 17%.

This sake is made from mizu-hashiroshi sake and aged in oak barrels for about a year. It has a very dark color and a strong sense of maturity even though it has only been aged for about a year.
I would like to try it on the rocks or with soda.

Personally, I like this one the best! It is sweet and sour and delicious.

The brewery is said to be the brewery of Kamitaka and Akashi whiskey.
The main brewery is said to be a mizu-hashiroshi brewery, but since we also purchased a mizu-hashiroshi aged sake, we went with this fast brewer for the raw sake.
The taste is quite rich and delicious with a raw flavor.
When I tried it lukewarm, it became a little softer, but I slowly enjoyed its rich flavor while it was still cold.
Yesterday I drank a lot of strange drinks at my favorite bar with a maniacal owner.
First up was a Japanese Soul 🍶 with an acidity of 6.8, made with white malted rice.
A golden liquid is poured into the glass... 🥃.
The top aroma is sweet with a hint of acidity.
When you put it in your mouth, the sweet and sour taste is followed by the umami of rice, but it is sour until the end.
The overtone aroma is like a mixture of koji rice and white wine.
