The toji was the former toji of Mimuro Sugi, so you could say it is a Bodhi yeast yeast yeast yeast yeast yeast brewing.
It is a stable, perverted sake, Nippon Soul 🍶.
The color is clear but firm yellow.
The nose has a burnt caramel-like aroma mixed with a grain-like aroma.
The mouthfeel is viscous and thick.
The taste has a caramel-like aroma, with a thick, concentrated honey-like sweetness, followed by sourness and a rich sweet and sour taste.
Well, it's almost like a dessert wine or a noble rot wine, and it's a fine perverse wine 🤣.
Some breweries don't like to be called "perverted sake," but this one is a brewery that would be pleased to hear the opposite 🤣.
