5th cup Another challenge with the same water yeast 💪. It's called "Nihon Soul", which means "Japanese Soul" in Japanese. The label is a huge cherry blossom 🌸! It's a bit of a wild ride 🤣. 70% polished Hyogo rice, 13% alcohol by volume. Sake degree is -56‼️. It's a good thing they call themselves "Nandoro" 🥹. It's lower alcohol than the previous one, and it's also raw sake, but it has the same matured aroma (well, it's still raw sake 😅). The sweetness is like honey or caramel. It's like an after-dinner drink! I learned a lot!

Junmai Unfiltered Nama-shu - Mizumoto brewing ⭐️⭐️⭐️⭐️⭐️⭐️ Polishing ratio 70%, ALC 17%. The aroma of rice (koji aroma?) is strong. Strong aroma of rice (or malted rice?). 神戸の友達が送ってくれたお酒。前に飲んで美味しかった「神鷹」と同じ蔵元なんですね!最初は冷酒で飲んで、そのあと酒屋さんのメッセージ通り60℃の熱燗でいただきました。断然、熱燗のほうが美味しい!!!しょうゆのような(?)香ばしさが印象的。確かにイタリアンに合うかも…カルパッチョと一緒に飲んでみたいお酒でした🥰
