This time it is Edo Kaijo, which was given to me as a birthday present. It is a junmai ginjo, unfiltered, raw sake brewed by Tokyo Minato Brewery. This is my first Tokyo sake. I am grateful that I did not have a chance to get it. I got it from Hasegawa Sake Shop in Gransta, Tokyo Station. The rice used is 100% Yamadanishiki Polishing ratio is 60 Alcohol content is 15 The aroma when the bottle is opened is fruity with a somewhat subdued, clear feeling. It smells sweet, like melon and banana. When poured into a sake cup, it has a clear, pale yellow color and a smooth, silky texture. In the sip, the mouthfeel is soft, with a gentle, smart sweetness that is slightly thickened. In the mouth, the juicy flavor spreads with green apple and melon-like fruitiness, rice flavor, and a hint of refreshing citrus acidity. After that, a slight astringency and bitterness finish off the taste. The lingering aftertaste is the sweet umami of the rice. It has a sense of body, as is typical of the original sake, but it is soft without corners. It is easy to drink, with no clinging sensation on the tongue. You can enjoy the aroma and flavor as time goes by, and I think I prefer it closer to room temperature.

Where to buy】Tokyo Brewing Co. Tomatoes, tomatoes, etc. The aroma is subdued, the mouthfeel is fresh, and it is mildly pleasant to drink, not unlike Omachi. Could use a little more character. Rating: B

Wakamatsuya, which once went out of business as a sake brewer, once had a back room and was named after its history as a secret meeting place for the feudal lords who aimed for the opening of Japan and the bloodless opening of Edo Castle to civilization. Thanks to its slightly effervescent taste, the first cup of sake was so good that I drank it all in one gulp. The acidity that comes out as the sake rolls down the throat, combined with the smooth sweetness when swallowed, makes it a dry sake that is very easy to drink. The almost colorless liquid and the thin, inconspicuous legs make it a very easy-drinking dry sake.

National Sake Fair 2025 (... - ̀ω-...) I had seen Edo Kaikyo on TV a lot, so I knew about it. The people at the Tokyo booth seemed to be well accustomed to talking with us. When I asked them to choose a sake from the Tokyo tap water, they said it would be Edo Kaijo. Contrary to my expectations, it was a very beautiful sake! The mild sweetness was also refreshing! Well, I guess it's natural that the water was judged to be good by professionals, but I can't picture it at all! Everything from yeast to everything else is all Tokyo It's like a "Tetsudou Datta" sake, but it's amazing that they can run a business with that kind of quality. And then there's Palla-Casey. This one is more like a sweet and sour wine. It's not for me, but I found that I don't need preconceived notions about Edo Kaijo! I found out that it's not for me!

We visited Tokyo Minato Brewery, the only sake brewery in the 23 wards of Tokyo, and had the opportunity to taste some of their brews. It is brewed with rice from Tokyo, water from Tokyo (a surprisingly Asaka water system tap water, specially filtered, of course), and brewed in a building in central Tokyo's Minato Ward. It is quite tasty. It is my favorite flavor system.
