I'm sitting here in this enormous hotel room in Visby (Gotland, sweden), surrounded by friends. I Just cracked open my first bottle of Shironeko Junmai Ginjo.
The first thing I noticed was the body, robust, full and deep.
This bold nihonshu is absolutely beautiful! Not the ginjo I expected, this drink has balls like tanuki and the elegant confidence of a Ginjo! Something special is going on here, I think it's the yeast but I have a lot to learn and I'd love to find out!
