This is a new Daiginjo 2022BY from Zaku, the pride of Mie Prefecture. The rice polishing ratio is 50%, and the alcohol content is 15 degrees. I like Saku, don't you? Thanks to Kofukuya in Fukushima, Osaka, for the new sake! The appearance is colorless and transparent. The aroma is a sweet ginjo aroma with apple-melon-banana notes. The juicy, refreshing mouthfeel is a combination of acidity, sweetness, and umami, and it is irresistible! The overt aroma is fresh with a hint of alcohol from the new sake. As it rolls around in the mouth, the acidity stands out in addition to the sweetness. The aftertaste fades away like a shimmering flame, leaving an astringent aftertaste on the tongue. To put it mildly, it's insanely delicious. I like it. As you drink more and more sake, you will be repeatedly attacked by waves of sweetness and umami, which will make you happy. The stylish label is said to be made of Ise-katagami "old pine tree and plum tree". It's a great way to express the festive spirit of celebrating new sake! At first, the same name as a mass-produced MS from a certain robot anime was talked about, but this taste is real. It may not be red, but it's at least three times faster! We enjoyed this new sake brewed with sincerity using local subsoil water and the delicious taste of rice carefully grown in Mie. Thanks for the treat!

This is Hirotogawa Special Junmai Unfiltered Nama-shu from Matsuzaki Shuzo in Fukushima Prefecture. The sake is made from Fukushima rice "Yume no Kou" polished to 55%. We had it at Fukushima Kofukuya, a standing bar in Fukushima, Osaka. It is highly praised by everyone at Sake-no-wa, so we will have it with high expectations! The appearance is clear with a sae-like feel. The aroma is a sweet ginjo aroma with a hint of banana. The first attack on the palate is sweetness and umami, with a rich, mellow texture. Then, the hint of ginjo aroma that rises with the acidity is pleasant. The aftertaste is finished off by the acidity while leaving a slight bitterness. As you drink more and more, the acidity gradually becomes more noticeable. The richness on the palate is light, and the wonderful harmony of sweetness, umami, and acidity is intoxicating. It is a good sake that does not disappoint, thank you! I highly recommend Kofukuya in Fukushima, Osaka, where you will always be treated to delicious sake and tasty snacks with excellent costuming!
