I bought this one at Kimura Sake Brewery after hesitating between it and Daishinshu. I have had Toko before, but this was my first time to try Yong. The top aroma is mild but fruity. As the introduction of Shusen-do Horikazu says, it does have a hint of cherries, doesn't it? It is dry and fresh with a moderate sweetness. A little citrusy? Sharp dry sake. A little too light for me? A little too light for me. After a few days, the dryness settles down.

Was this the first release of Kinmon-Nishiki? Purchased at Kimura Sake Shop. Gorgeous and noble aroma. The sweetness and fragrance linger for a long time. There is a gap between the gorgeousness of the taste and label and the too-costly price. The taste is a little bit like a flower sun shower. I think it is similar to the recent "gorgeousness" that is not too sweet. It's a daiginjo spec sake, and I think it's one of the cheaper ones among the sake made with Kinmon-nishiki.

Purchased from Kimura Sake Shop. The aroma is calm but gorgeous. The sweetness is more subdued than expected. It has a clear taste that shows the quality of the rice and water. Every time I drink it, I think that Tamitsu is very deep. It is very difficult to make. I'm getting more and more confused about what is Takamitsu 🤔. The first Akaban Omachi I drank was perfect for me. Well, I couldn't get into it at all... I think I would have preferred Kami no Ho or Dewa Sanzan... When I drank it again, I got the impression that it was fruity and refreshingly dry.

At Kimura Sake Shop in Tamatsukuri as well as Tamitsu. I thought this was the first time I had seen Morpho on draft, but the liquor store owner told me that it was released on draft to commemorate winning a gold medal two years in a row at the New Sake Competition. It doesn't have much of an aroma, but when you put it in your mouth, you can feel its gorgeousness. It is juicy with a beautiful berry-like sweet flavor. The elegant and gentle taste is common to the hi-ire style, but the freshness is enhanced because it is a fresh sake.

At Kimura Sake Shop in Tamatsukuri. I was not sure whether to register at Tamatsuko or Early Spring. Rice is Kami no Ho and Koshihikari. It tastes like a slightly effervescent and refreshing ramune. The sake shop where I bought it said it was an unfiltered, unpasteurized sake, though it is not written on the bottle.

Purchased at Kimura Sake Shop in Tamatsukuri. Although it is not written on the bottle, the store's pop-up says it is an unfiltered, unpasteurized sake with a sake degree of +5. The aroma is like melon and muscat. It is clean and refreshing, but in the second half of the bottle, a strong umami and melon flavor comes through. There is sweetness, but it is a bit on the dry side. It has a greenish taste. I think you can feel the sweetness more after the next day.

At Kimura Sake Shop in Tamatsukuri. This liquor store has recently been giving away candy when you buy sake. This time I got an Umaibo. I think it used to be Dongtoyaki. I had already had Momoiro before, so I tried to pass it up, but the last one I had was Ihyakumangoku, and this time it was Sake Komachi with different rice, so I bought it. This is like juice! Very sweet and sour. It's low at 8 degrees, so it will be empty in no time.

Purchased at Kimura Sake Shop in Tamatsukuri. The color is beautiful like a cherry blossom. It's sweet, but not too sweet. It has more sake feeling than the other day's Amafuri. It is low alcohol and has a gentle taste. Oze no Yukidoke is probably my favorite sake made with peach-colored yeast.

It was a shop that didn't send out any information, but now that I've started SNS, I don't have to hide it, do I? I bought it at Kimura Sake Shop in Tamatsukuri. They have many of my favorite brands. Machida Shuzo, Ryuki, Sugata, Yamori, Kozaemon, Sasashu, Tamitsu, Shichibondari, Sensuke, Kiyoshi, Fukuda, Dai Shinshu, Chiebijin, Ganki, Ottersai, Kubota, Shinomine, W, Eikun, Akika, Drunken Whale, etc. When we went to buy the Momoiro, we found this too, so we bought it. It seems that this sake was pressed by bag hanging because of the trouble of the equipment. It's smooth and clean, and although it's 60% polished, it tastes as if it's more polished than that. It's just like the label says, but it tastes like citrus. It's made with Yamada Nishiki from Shiga Prefecture, not Hyogo.
