Slightly effervescent, pleasantly refreshing and spicy. It goes well with food and drinks.
I'm looking forward to seeing how it changes after a few days after opening the bottle!
It says to be careful when opening the bottle, but there's no problem even if you open it normally (laughs).
I wonder if it's because the meal I paired it with was too rich?
I'll try it again another day.
This sake comes in a bottle that looks like champagne🍾. The impression of the bottle made me think that it would be fragrant, but it is an elegantly sweet sake with a subdued aroma.
Generations (Ecru) 2018
Is there not too much acidity in the Shinsei style?
Because you're pairing it with sashimi?
Was there ever a Shinmasa that wasn't easy to drink, or didn't have the makizake style at all?
We passed by the brewery and I couldn't help but buy it.
I knew about Hannya Yu, but I didn't know about Hatsuzakura.
Fresh and easy to drink with no peculiarities❗️
Purchased at Heiwa Shuzo's antenna shop. According to the employee, it is brewed to be delicious at room temperature or lukewarm. They recommend pairing it with saury and mushrooms.
I'm having it today with Hiya. If you ask me, it seems to have a surprisingly robust flavor for a Kido.
Richie Hawtin and Heiwa Shuzo collaborated to brew this sake.

It has a sour taste for Kido. It is also good with meat.
Shibata's be cool!
Junmai Daiginjo with 50% Yamada Nishiki, 16% alcohol by volume
It's super refreshing as a summer drink. You can drink it in a gulp.
I spoke to the brewery's direct management store, and they sell out as soon as they ship it.
I got a bottle of wine in return for my hometown tax payment to Nishiwaki City.
It's mellow with no curdiness at all. It doesn't have any fruity taste. It doesn't make it hard to drink.
Yamada Nishiki, a daiginjo sake with 35% milled rice content
This sake was brewed at the same time as the sake entered in the competition.
It's a bit spicy and refreshing, but it's a beautiful sake.
A sake brewed in Omachi, which is rare in Kido
I got it at the directly-managed store of Heiwa Shuzo.
It's a little bit like a grape and it's really easy to drink, just like Kido.
Junmai Daiginjo (50% polished rice alcohol), Yamada Nishiki
As expected of a safe and stable Kido. It's easy to drink because it's fruity and has no peculiar taste.
