After opening a bottle of Cosmos, here's another one to compare. Ecru 2024 This was freshly shipped, but the brewer commented that it was already ready to drink, so we opened a bottle right away! It had a fresh and young impression, while still having the taste of Ecru. The comment from the brewer was that you can enjoy the green taste, and I had a strong impression of it! Personally, I would like to let it sit for a while.

Memorandum of Shinsei opened last weekend Cosmos 2022 Cosmos has a delicate sweetness and acidity that can be enjoyed among the Colors, and this one has been ice-aged in Lemacom for 2 years! The freshness like cherries and the refreshing sweetness and acidity like apples were superb! I think it has a little bit of sweetness and flavor due to the aging process.

I've been actively drinking brands I've never had before recently, and this was one that hit the jackpot right out of the gate! Yoakemae Junmai Ginjo Namaichibon Shizukutori If you like gorgeous, sweet, delicious and fruity wine, I highly recommend this one! Slightly effervescent and fruity aroma from the first sip! The taste was also peachy, elegant, sweet and delicious!

Sometimes, my favorite liquor store displays only Junmai Daiginjo, so I am grateful to be able to enjoy Tobiroki! Junmai Daiginjo Junmai Daiginjo Namazume It is a little expensive so I can't buy it often, but it is my favorite flavor of Tobiroki! I like the sweetness and umami of the rice blended with the smoothness of Tobiroki, which is characterized by its clean and light taste.

Nagatoro warehouse in Saitama Prefecture, the second bottle is a Nakadori. Nagatorogura Junmai Ginjo Namaiginjo Nakadori Generally speaking, Nakadori is said to be more stable and tasty, but how about this one? Well, while the Arakogiri has a strong freshness, the Nakadori has a more stable flavor. I was able to enjoy the umami more than the sweetness and acidity, so even though they are the same sake, I was happy to be able to taste different flavors!

Sake from Saitama Prefecture has become increasingly popular, such as Sairai and Hanahayo, and this is one of my favorites. I bought two bottles and compared them! Nagatorogura Junmai Ginjyo Nama Genjyo Arahashiri I was hooked on this sake when I met the brewer at a tasting at my favorite liquor store! It tasted like white grapes, clean, sweet and fruity. I personally liked the freshness of the "Rough Running".

I will work 3 days after GW and will be off again, so I can't get out of my body in holiday mode,......, So, I opened a bottle of this low O✕shuwashu beer. Flax Cat Spark At 11% alcohol by volume, it has a characteristic acidity and a delicious sweet taste. I used to choose only one sparkling Niimasa, Tenagara, but this sourness is addictive and I love both of them!

I finally had some free time on the last day of GW, so I went to the corner at Third Place. The fifth drink was Ten Frog Clear, which we had at the anniversary celebration the other day! The fizziness was a little weaker, but the refreshing sweetness and flavor of Tenkaeru was superb!

I finally had some free time on the last day of GW, so I went to the corner at Third Place. The fifth cup was a nirvana tortoise that had been aged for about a year in the store! Nirvana Kame was brewed with 88% low white rice, and when it matured, the balance of umami calmed down and it felt mild!

I finally had some free time on the last day of GW, so I went to the corner at Third Place. The fourth drink was a bottle that I personally could never buy, as it is only available at some liquor stores and restaurants! Sairai S's This is a test brew from Kitanishi Shuzo, which is gaining popularity for its Sairai and Bunraku brands. This is the first time I have seen a green Sairai! I didn't even know it existed, but it is not Junmai but Ginjo spec. I had an image that Sairai = Junmai, but this one has a refreshing aroma! The aroma is fresh and clean, reminiscent of Bowmore or Laphroaig whiskey. Compared to Sairai, it has a dry impression. If you are a regular drinker of Sairai, I think you will find it interesting to try.

The third drink was a free one, which I didn't expect to get because it was a personal item of a good friend of the waitress! Tangerine Direct 2023 It is said that the tangerine directly pumped is rarely found in stores because of its low distribution volume! Its taste is citrusy with a sweetness similar to that of grapefruit or tangerine. It is a great wine because you can enjoy its citrus aroma and sweetness when it is cold... I was very thankful that I could drink it, even though I felt frustrated that I wanted to drink more but could not!

I finally had some free time on the last day of GW, so I went to the corner at Third Place. The second drink was a 2022 by Heresy Guru Co. This one is a high spec one using white malted rice and polished up to 40% Akita Sake Komachi, which is a must for me as a flax cat lover! The pleasant acidity and umami resonate gradually, and it is so delicious that you can't help but groan "Koooooooooooooooooooooo! It was moderately chilled and delicious!

I was so lucky because I couldn't go to CSW and other events this year, so I gave up thinking that I wouldn't be able to drink it! I enjoyed the sourness including bitterness like grapefruit, and then the sweetness.

The sweet and sour Twelve Roku that we always drank is now out of season, so we opened a bottle of this doburoku. Uguisu in the garden - doburoku with a Japanese bush warbler mark This doburoku looks like it has a thick rice flavor! The sweetness and acidity are lighter than those of the 126, but the matte flavor is quite good! It is also cosy, so if you feel like drinking doburoku, it might be a good choice!

A special bottle of my favorite Sou no Mai by Kangiku, polished to 29%. Sangiku Silver Lining A bottle of our favorite rice for sake brewing from Chiba Prefecture, So-no-Mai, polished to such a high level that there is no reason why it can't be delicious! The sweet-ripe apple-like flavor and beautiful acidity make it a bottle that you will never get tired of! I should have bought a bottle because it is so delicious that I can drink a bottle lightly...,

Opening a bottle of Akabu's limited edition sake to be drunk in early summer. AKABU AIR2025 A cool, refreshing aroma and taste that fits the image of the crystal-clear bottle. It may not be enough for those who like the classic taste, but it is a bottle that can be drunk easily on a hot day.

Shinsei Drinking Comparison at the recent Third Place anniversary event Ten Frog Clear 2023 This is Tenagaru Clear, which was released in the 2024 hanpukai and has since become a standard The regular Amanoeru contains oli and often bursts during secondary fermentation in the bottle, Amanagashi Clear has a clear taste without the oli. I love Tenkaeru, so it was an excellent product that I could drink easily!

Third Place's anniversary Shinsei drinking contest was held recently. No.6 Fermen-TYPE This is the commemorative sake for the event held at Tokyo Station Yaesu on 6/6/2023. I remember lining up in the morning for the event where you could drink a lot of Shinmasa for one week only! Thank goodness we could still drink the sake from that event! However, I had the impression that it had aged a lot due to being a draft sake! This was one of those bottles where you can enjoy the changes in flavor due to aging!

Memorandum of Shinsei drinking comparison at an anniversary event at my favorite liquor store the other day. Nirvana Kame 10th Anniversary Sake This bottle was sold only at designated liquor stores on December 1 last year and caused a flood of trouble at a certain izakaya. Nirvana Kame, the 10th anniversary sake, is characterized by the aroma and taste of low-polished T Kijo sake. It has an elegant herbal and black tea-like aroma and a slightly sweet taste that is exquisitely delicious and never boring!

Memorandum of Shinsei drinking comparison at an anniversary event at my favorite liquor store the other day. Nirvana Tortoise Kai This is a version of Nirvana Kame brewed with low white rice (Nirvana Kame) and ancient rice (red rice). It had a characteristic berry-like sourness due to the ancient rice! It is fruity and one of my favorites!
