More and more refreshing summer drinks are coming out now 🎵! This NO.77 has a perfect balance of apple-like acidity and sweetness 🎵! It's like a good Junmai Ginjo mixed with white wine! It was a delicious sake that makes me look forward to summer🎵!

My new favorite two rabbit series 🎵. As the name implies, it is a sake that pursues the two contradictory elements of taste and aroma, acidity and umami, heavy and light, etc., and finishes with a high balance~(≧∇≦)

Akatake's Spring Limited Edition Sake "SAKURA"! It seems that there were only a few bottles shipped this year, so we were able to get it just in time 💦(ˊˋˋ ;)💦(Thank you KIBUNE Sake Shop!) It has a low alcohol content of 12 degrees. It is fresh and light on the palate. The balance between the refreshing grape aroma and the clear acidity makes it easy to drink too much of it~ (laughs) The gorgeousness in the mouth and the lingering aftertaste reminds me of the falling cherry blossoms 🎵.

I knew Masumi would never betray me~🎵. I look forward to this "Usu nigori" every year! The light but dignified mouthfeel was followed by a powerful flavor, and I almost finished it all at once, but I'm looking forward to the flavor after the fermentation progresses, so I'll be patient! Oh, by the way, the lid flew off better than last year (laughs).

Rokka Shuzo, Hirosaki City, Aomori Prefecture, "Jokkari". It means "stubborn person" in the dialect of Aomori, but I didn't get that impression from this sake at all (laughs). Moreover, right after opening the bottle, it had a sweetness and a strong sourness, but after leaving it overnight, the sourness completely disappeared and it became a sweet dark fermented sake 🎵. In a sense, it is "tsundere"! (lol) We had it in a hot pot with long bean sprouts from Owani Town, next to Hirosaki City.

It has a gorgeous aroma like a fruit wine, and then a slight bitterness that makes it perfect as a food wine. It's a dangerous sake that can be drunk easily. It's amazing that the brewer of this delicious sake is only 27 years old! You can't say "young people nowadays are..." 🎵.

It's autumn! It's the season for chilly weather 🎵. So we had a bottle of Junmai Hiyaoroshi from a local sake brewery, Akatake Shuzo 😊. It's fruity, but it's also well-balanced enough to drink as a mealtime drink, perfect for the fall season. When it gets a little colder, I think it's definitely a great drink to warm up 😊.

We remembered that it was summer in the intense heat after the first day of autumn, and we opened a bottle of "Mutsu Hassen Summer Ginjo" that had been sitting in the fridge for summer (laughs). It was a crisp, low Al & pear-y fruity taste at 14 degrees 🎵. If it's this kind of taste, Alzoe isn't bad, either~(*^ω^*)

In the heat of summer, I happened to find a bottle of sake from Ishikawa Shuzo, which they call "Natsu no Nama Shochu" 🎵. It has a refreshing sourness just like an apple, with a sweetness, but it has a refreshing aftertaste. *˚. After a little bit of drinking, I said, "This would be absolutely delicious in a sorbet! So I'm sleeping in the freezer now (laughs).

It's Toyohai's Junmai Daiginjo "Green Nanako Nuri" 🎵 It's made from Yamadanishiki rice and Hohai rice for the sake of sake. It has a fruity and light aroma like a melon, and the first taste is sweet 🎵. It's reasonably priced for a Junmai Daiginjo, and I'd like to drink it again for everyday use!

Toichi Takahashi brewed a different brand of "Beautiful Sake Design" 🎵 than Kaya no Kayasha I don't know, the name alone is already delicious (laughs). It is made without paddling, adding water and filtering. It's full-bodied and firm, but gorgeous, with sweetness and a smooth dry finish. Slightly bitter, that's how you want it 🎵. This is delicious 😆

I went on a tour of the Hachinohe Sake Brewery, the brewery that produces the "Mutsu-Hassen" brand of sake, because they've reopened their doors to visitors. It was actually supposed to be reopened to Aomori Prefecture residents only, but Iwate Prefecture residents were given the OK by way of a special exception! (Laughs) They used a DVD to introduce the brewery as a corona countermeasure, but I enjoyed the atmosphere. At the tasting, we tasted mainly the young master brewer's challenge brands, but the rice grown in the brewery's own paddy fields was used to make a low quality sake. The sake brewed with polished rice left a strong impression on me. It has a fruity taste despite the low-polished rice, and the bitterness of low-polished rice. It was a drink that said, "You're doing it!" (*^^^^^^)

My favorite local brewery in Iwate Prefecture, Akatake Sake Brewery ♫ It has a fruity taste like lychee sake brewed with the prefectural rice "Yui no Kaori" 😊. Thank you for making so much good sake that makes me happy to be born in Iwate Prefecture ✨
