This time it is a super buy.
It has a strong yellowish color, and I thought I'd lost it, but it is rather smooth. I think it is more of a warmed sake than a chilled one.
I am drinking it every night. I've opened another Kariho, Kaze no Mori Yamada ^_^.
It is a limited revival. It is dry, bitter and powerful from the first sip. To be honest, I prefer the usual 807. I am looking forward to the change and will drink it again tomorrow.

I wanted to learn something specialized, but I returned to tasting it as I felt it. Yamahai is characterized by its complexity ☺️ and I want to drink more and more of it 🙇.
Immediately after opening the bottle, the sake has little Junmai-like character and is quiet. There is no doubt that it tastes good. Resist the urge to drink it gulping it down, and enjoy the changes over time ^_^.

Kaze no Mori often chooses Omachi. The gasiness when opening the bottle, the banana feeling after taking a sip, the bitterness.... It is fermented at low temperature for a long time and brewed with ultra-hard water. It is also cosmetically pleasing.
It has been a long time since I have posted. During my long absence, I enjoyed a Kariho Nama sake that was miraculously left in the liquor store fridge. From today, light and dry is the standard Niigata sake. It is a summer sake ginjo and is like a delicious water.
