Kubo Honke's new sake for 2020 BY. Fresh, sharp and dry. The aftertaste is umami, bitterness, and a bit of sweetness. It's more rounded with a bit of time than right after opening the bottle, and it can be heated up a bit.
It is gentle though the flavor is strong. But light when you think of how flavorful it is. But it is not unpleasant to drink. I think this is a unique Tenmyo Nama Genshu that has a good balance of various flavors.
The aroma is elegant and fruity, the mouthfeel is very soft, and the mild umami sweetness has a gentle sweetness and a beautiful acidity with a nice aftertaste.
The fruity ginjo aroma, delicious sweetness and fresh acidity are outstanding. It is easy to drink, but the flavor overflows as you drink. Surprisingly, it is more of a food sake. I think this is the goodness of this sake.
It has a fresh sweet and sour taste with a bitter aftertaste that leaves a smart sweet aftertaste. The taste is so good that you forget it's Honjozo for a moment, and I've never encountered a sake of this quality for less than 1000 yen for a 4-pack, except for this Honjozo. It's just wonderful. I'm impressed.

It is aged for 7 years and it is still raw. The unique mature aroma and the acidity is still the same. To tell the truth, I couldn't understand the merit of the namaizume. To be honest, I couldn't understand the quality of the raw sake.
