This is the first sake brewed at the new brewery of Yoshida Shuzo, which produces the Hakuryu brand. The company name is Symphony Yoshida Shuzo and the brand name is Hakuryu Zen. It was a precious experience to be able to taste the first brewed sake from the new brewery. Sweet and sour aroma of pineapple and berries at the moment of opening the bottle. No strong color, almost colorless and transparent. It has a gentle mouthfeel with sweetness, acidity, light bitterness, and a fruity to rice sweetness from the end to the lingering finish. The aftertaste is also crisp with no unpleasant aroma and makes you want to take the next sip right away. I found it very tasty. My personal impression is that the sweetness of the rice is similar to that of Tsururei Junmai.

I visited Rikisen Shuzo and purchased it. After talking to the brewer, we purchased it. The brewer told us to dilute it to our liking because it is a very strong sake, but this time we drank it as it was. It has a deep sweet aroma of rice with a hint of sourness. It has a classic rice flavor rather than a fruity one. The color is quite yellow. The sake rice is 100% Omachi. The mouthfeel is gentle, but you can feel the stimulation of alcohol. It has a classic sake taste, but the gentle sweetness and acidity make it quite easy to drink.

The sake is made entirely from Sakahomare, a sake rice produced in Fukui Prefecture. The toji-san told us that they dare to make it dry by using sweet sake rice. Sweet aroma of rice, clean and fresh. The taste is clean on the palate and has a gentle, spine-less flavor. It does not have a distinct sweetness or spiciness, but it has a nice sharpness and is very easy to drink. I felt it was a sake suited for a meal, bringing out the best in snacks and meals.

This sake brewery is located in Ono City, Fukui Prefecture. Although the introduction states that they specialize in high-end sake, there was a selection of reasonably priced sake. I was intrigued by some of the more unusual sake, such as apple yeast and rosé sake. I bought the sake recommended at the directly-managed store. It had a sweet soy sauce-like aroma like Mitarashi dumplings and a sour flavor. It was very gentle on the palate, with a good balance of sweetness, a little sourness, and bitterness, and was easy to drink. It has the taste of so-called sake, but it is very easy to drink and recommended as an introduction to classic sake.

A standard sake from a brewery in Katsuyama City, Fukui Prefecture, it is available at all local supermarkets. I have had it at room temperature, lukewarm, and hot, and personally preferred it hot. This time, I put it in the freezer and had it snow cold. Sweet aroma of rice, with a hint of sourness. The mouthfeel was gentle and did not feel much alcohol. Gentle sweetness, a little sourness, bitterness, and a slightly spicy aftertaste. It felt watery and moist in the mouth.

I purchased this at the Yoshida Sake Brewery Festival. It is sold only at the festival, and the limited edition changes every year. Slightly fruity aroma, with a hint of sweetness. Thanks to the low alcohol content, the sake flavor is subdued. Even so, the sweetness and fruity flavor of sake can still be felt. The soft mouthfeel and fruity sweetness make it very easy to drink and delicious.

Firm sweet aroma, fruity flavor. Denshin no Haru has a sweet and sour aroma like strawberry, which is my favorite sake. As the aroma suggests, it has a fruity sweetness and a slight bitterness, and I felt it was a little heavy. It was very easy to drink and tasted very good sake despite its 17% alcohol content.
