A DRY version of Kaze no Mori ALPHA. It has a crisp mouthfeel with a refreshing fruitiness and sourness that leaves a lasting taste. It has a hint of sweetness that is typical of Kaze no Mori.
Very fruity, heavy and gorgeous. It's heavy, but with a deep sweetness and a clean finish. I think it's the natural effervescence of the fermentation process. It is very easy to drink. Very delicious.
I bought it at Okazaki Shuzo when I visited my wife's parents' house in Ueda City. It is a limited edition made with Hitogochi sake rice produced in Tozawa, Ueda City. It has a very gorgeous and fruity aroma. It is like a juicy Muscat. A little bit of acidity is pleasant.
The moderate refreshing sourness is just like "Suzumisake", which is good for white fish sashimi in the coming season.

U" is the Chinese character for "Yu" which means gentle. And "U" means "Umami".
It is a gem with a lot of gentle umami.
