Purchased because of its appearance. The aroma is of soft acidic lactic acid bacteria like yogurt or Yakult. When you put it in your mouth, it tastes like rice. The aftertaste is a little sour and pleasantly bitter. I thought it might be sweet, but it was not. It was an interesting sake with a strong alcohol taste. It might be good as a palate cleanser or after-dinner dessert. It is very tasty when amazake is mixed with this. (Personally, I thought that amazake on its own was too sweet, and if you mix it with water or soda water, it would be too diluted...lol)
