The taste is dry, with little sweetness like Otters, which is also made from Yamadanishiki, and quite refreshing with a slight acidity and a strong alcohol taste. A shochu-like sake with a strong umami flavor and a clean finish. It seems to go well with any meal. I prefer a little more sweetness, but it is delicious and never gets boring!

It is not so good because it becomes so strong that it erases the rich rice flavor. When chilled: ⚪︎ The smell of vinegar is weaker than at room temperature, and the smell of rice remains slightly. The acidity is weaker than at room temperature, and the sweetness of the rice is slightly stronger. But it is not too sweet and has a nice sharpness. The quality of the water can be felt well, and it tastes best when chilled.

I chilled it in the fridge and drank it. Almost transparent in color Slightly sweet aroma of rice When you put it in your mouth, you can smell the sweet aroma of rice. The taste is very clean, yet very sweet. It tastes like sugar cane without any smell. There is a slight sourness, but it is not noticeable due to the sweetness. Fruity, sweet, and refreshing
