The taste is dry, with little sweetness like Otters, which is also made from Yamadanishiki, and quite refreshing with a slight acidity and a strong alcohol taste.
A shochu-like sake with a strong umami flavor and a clean finish.
It seems to go well with any meal.
I prefer a little more sweetness, but it is delicious and never gets boring!
