Amabuki Junmai Ginjo Nama! Made with strawberry yeast... Stunning, like being kissed by an angel. I really really love Amabuki Shuzo and all of the sake they produce!

This sake was produced by maitsuru shuzo in Akita and has been matured for three years. The body was a lot lighter than I expected, due to it being brewed long and slow in cold temperatures. I thought the colour was going to be a bit more intense considering it has been aged a little but under bad lighting it appeared almost water white! I really enjoyed it, and pairing it with karaage seemed to work quite well too.

I have completely fallen in love with this complex ginjo Nama genshu, it's soft strawberry and cantaloupe nose suckled me in. I never thought I'd taste something so unique and delicious from a can ;) It paired perfectly with my dinner, salty and cheesy potatoes with salmon. Umeeee

I'm sitting here in this enormous hotel room in Visby (Gotland, sweden), surrounded by friends. I Just cracked open my first bottle of Shironeko Junmai Ginjo. The first thing I noticed was the body, robust, full and deep. This bold nihonshu is absolutely beautiful! Not the ginjo I expected, this drink has balls like tanuki and the elegant confidence of a Ginjo! Something special is going on here, I think it's the yeast but I have a lot to learn and I'd love to find out! Arigato omi shuzo!

I just had my first bottle of cowboy yamahai, I was surprised it was a Junmai Ginjo genshu as well! Delicious, hearty and unforgettable. The label alone should win awards... This nihonshu is like getting beaten up by umami football hooligans but still going out for deep fried food afterwards. Yeeehaaaawww! Cowboy yamahai daisuki des! Umeeee

Picked up this Junmai Ginjo from a store in Stockholm! I would say that this bottle is very true to the Ginjo class! Lots of Ginjo-ka on the nose, delicate and light body with a short pleasant finish! I have spent a lot of time in Chiba, I never knew about this Nihonshu! Yum!

This Junmai Daiginjo i purchased in England is a bold, large bodied drink with zaps of ripe Banana, strawberry and honey melon! I love it, next time I'd like to pair this with some food.... For now I'm happy to drink it in the Swedish sun and listen to The Pogues. A+ Outstanding JDG!

This Honjozo is from Nada, Kobe. It is a simple easy drink with a surprising mild floral nose but a dry cereal grain delivery. Made with both yamada Nishiki rice and gohyakumangoku, i recommend this bottle for getting drunk... Any time... Anywhere. Cheers and Kanpai! Xx

Here I am in Manchester, England! I went on a sake hunt but this is all I could find! Ozeki is a really enjoyable "American" sake, there is no seimaibuai on the bottle or other and method/ingredient information... I assume this is some kind of tokubetsu Junmai or honjozo! Cheers!

I am becoming a big fan of Amabuki shuzo in Saga prefecture, every bottle I try i am more and more impressed! In their Tokubetsu Junmai they polished yamada Nishiki rice down to 60% and by using Begonia flower years this bottle tastes like no other, I usually don't like super dry Nihonshu but this is outstanding! Do you like Amabuki? :D

I was so surprised by this Yamahai Junmai-shu from Saga prefecture! The fact that Amabuki uses flower yeast brought so much extra floral aromas to this outstanding earthy, umami packed Junmai!! Despite being in this class it held itself lightly, super well banced and something truly special! I think Amabuki is my favourite brewery in Japan. Wow!

This tokubetsu Junmai was purchased in Italy by the singer of Speedstroke and I will drink it before going on stage here in Germany! This is an earthy-soft but deep junmaishu with almost soy undertones. I'm not sure what makes this bottle "tokubetsu" but it sure is special!

Gekkeikan, somewhere between California and Kyoto. This Junmai carries medium earthy tones with melon whispers and brings joy to Hobbits living in Hobbit houses! Kanpai!!!

The winter is over! The sun has returned to Sweden! I found a bottle of Akashi Tai! I don't have much to say except that this Junmai Ginjo is very easy, subtle savory hints on the nose and distant fruits on the palate. For me, this is a bottle I will enjoying getting drunk with! Yopparai style. But I love the colour, in my wine glass it is a medium soft green lemon. Beautiful! Does this mean it is not filtered with charcoal? Is this Muroka? I don't think so but it is beautiful to see that colour
