1st day of bottle opening: tight, slightly carbonated, with a strong bitter aftertaste.
2nd day of opening: Same as the 1st day.
3rd day after opening the bottle: The slight carbonation is gone and the bitterness in the aftertaste has become weaker. After taking a sip, the sweetness is immediately followed by a bitter aftertaste that lingers in the mouth.
In any case, it is so delicious that it makes me cry because it is so cosy 😢.

It was fruity, not too sweet and refreshing, with just the right amount of umami to my liking.
The sashimi was not too small at all, and the mozuku seaweed from Oma was very tasty and new to me. The local dish of shellfish miso was really tasty and impressive.
It was a izakaya that I just popped into, but I'm glad I did 🎶I'll definitely go back!

Apparently it's a "re-fermented kijoshu" brewed over a 5 year period from 2013~2018!
For a Junmai sake lover like me, it was all white wine-like sake anyway! LOL!
