A glass at a standing drink at a buckwheat noodle shop. Slightly golden in color, smooth in texture, with a gorgeous ginjo aroma. The aroma is melon-like, with a fruity sweetness that matches the acidity, and a fresh juicy flavor with a hint of gas. It has a nice sharpness, giving the impression of a well-balanced modern sake that makes the next sip come quickly. Rice polishing: 50%. Strength: 16%. Pouring: Once Production: May 2023

It is not too floral and is very crisp, making it an ideal modern sake for occasions when you want to enjoy both food and sake at the same time. The label has a strong presence: "Yamamoto" is written in strong gold letters on a black background, like an arrow piercing through. The barcode is shaped like a sake bottle (or perhaps a sake bottle with a sake bottle inside), which I found interesting. Manufactured in October 2022 Akita yeast No.12? The year of production is the same as the last time, and the following impressions are the same as the last time. The color is a pale gold with a gorgeous ginjo aroma. In the mouth, the fruity aroma of isoamyl acetate combined with sweetness spreads with a young melon-like flavor, which is typical of Hououmida. Although it is fire-aged, it has a freshness, and I was surprised that a junmai sake can taste so modern, even though it is a 55 polished sake. Although it is dry, I personally find the alcohol content to be just right, leading to a balance between gorgeous and crisp. It was very tasty, and I would definitely buy it if I saw it at a liquor store. Manufactured in 2022/11 Tochigi yeast?

The full sweetness matches the acidity, giving it a fresh, modern sake flavor. There is a hint of bitterness, and although it is not spicy, it has a good sharpness, giving the impression of a well-balanced sake that makes the next sip quicker. Although it is a fire-aged sake, it is fresh and has a hint of gas, which matches the acidity. I got the impression that this is a delicious sake that is well-balanced and yet has a definite presence. I would like to drink it again if I have the chance.

It has a slightly sweet taste, and both the flavor and aroma are crisp, so the next sip comes quickly. The freshness of the sake makes you wonder if it is still sake. We would like to try the ginjo and daiginjo versions of Akabu.
