和尚丸水産
Shoninzawa spring water, one of the best 100 waters in Japan, is used as the brewing water. It is a junmai daiginjo brewed through long-term low-temperature fermentation and has a mild flavor and sweetness. About 10 years ago, I once walked to the source of the Shoninzawa Spring and was healed by the beautiful water, moss, and chirping of wild birds.
