The name of the brewery comes from a legend that a "turtle, a messenger of God," used to live in the Tenjin Pond behind the brewery.
It is said to be the first postwar brewery to convert all of its sake to pure rice in 1987.
The sake has a calm and mellow flavor. It is very easy to drink with a hint of spiciness. Yet, it never gets boring.
This is the 639th one-cup, one-pack festival bottle.
This time it is Shinkame's Yamahai Black.
It is 2020BY using Gohyakumangoku.
It is a souvenir from Tokyo the other day.
The color is a light yellow.
The aroma of rice is rich and fragrant. Mushroom, chocolate, and buttery richness.
First at room temperature.
From the smooth mouthfeel, the full-bodied flavor and mild acidity that has matured flow smoothly and thickly.
The bitter bitterness that gradually takes effect in the latter half is also good, and the bittersweet finish from this thick, umami sweet flavor invites you to have another cup.
And when it is heated up,
The sourness of the aroma is more pronounced, and it is easy to drink. It's also great warmed up!
It's also good to warm it up quickly or stop it just before it gets too hot. ♨️🍶
The previous generation was actually against the introduction of Yamahai Black, but after many years of persuasion by the master brewer, it was finally approved.
I am happy to take this sake as a souvenir and drink it at home slowly!

It was served cold.
The color is slightly yellowish. Slightly cloudy.
The aroma is fruity, like apples. There is also a slight yogurt-like aroma.
The mouthfeel is rich and mellow, and the flavor spreads quickly in the mouth. There is also a hint of sourness, but it goes away quickly and is not unpleasant.
Compared to Shinkame Junmai-shu, it gives the impression that this is sake.
The aftertaste is long.
It seems to go well with any kind of food.
Personally, however, I would prefer it if it were not a pure sake.

I don't know why I only want to drink Shinkame and Tateyama in the second half of the year.
I wonder if anyone can understand this feeling.

Purchased at Mitsuya Sake Shop in Nishiogikubo.
Unlike the image I had of Shinkame, I was a bit surprised by its dry taste and umami aftertaste.
It is delicious in its own way.
