This sake is supposed to be R4BY sake as they change the production around February every year.
I tried to ripen it a little fresh 🤭.
The top aroma is a sweet ginjo aroma that is mellow and rich.
In the mouth, it has a rich and mellow umami and sweetness with a chiri-chiri acidity.
It has a ripened feel and in a way it is not like Aomori sake, but it was a delicious sake with a deep flavor 😊🍶.
It had a gorgeous aroma and brought out the sweetness characteristic of Omachi, but with a slight bitterness due to the high hardness of the water used, and it had a clean and crisp taste.
I bought a bottle at the liquor store at the Hakushoku Center at the end of my summer vacation. I drank it with seafood from the north.
It is not so much stimulating to the tongue as it is super spicy, and the acidity and rice sweetness are well balanced. It has a nice sharpness, so it is easy to drink as a food sake without disturbing the taste of the food!
Is the mild acidity compared to other reviews because it is almost hiyayogoshi when it is bottled in August? I would like to try this bottle during the new sake season as well.

It is a beautiful sake in the Hakutsuru style, but the aroma is a bit weak due to the fire-roasting.
I often drink Hakutsuru's raw sake, so I may feel it's lacking 🤔.
