Sometimes I like to have Sake with Sushi, but the only Sake & Sushi place I can think of that is open in the daytime is Sugitama 😆.
So, a cup of sake 😋.
A strong umami flavor.
A subtle tanginess.
The umami lingers until the aftertaste, but it is clean.
The sweetness and acidity are moderate so they do not interfere with the sushi ingredients and the sushi rice 🤔.
I see, this is the kind of sake for sushi 🍶, I learned a lot.

It's not quite the same caliber as the sushi place J&N and their friends went to, but it's reasonably priced and a great place for a lunchtime drink 🤗.

When I see this label on the fridge at the liquor store, I reach for it. But I haven't had Gekka yet. A few years ago, there were some test brews and such, but nowadays there are a lot of things on the market 😁.

Kadoya Sake Shop started to carry it, so I bought it immediately. Basically, I try new brands starting with the cheapest ones.
This is good! No wonder it is so popular. The sweetness and acidity are elegant. This sake seems to be one of the drier ones in the series, but it has a nice flavor. It also accentuates the goodness of the sake I drank with it, which is exactly the kind of sake that fits my own sake philosophy. A few days later, I bought a second bottle.

The aroma is mild.
When you drink it, it has a chirichiri sensation and a fruity, light sweetness and umami ✨.
It's not a solid sake, but it comes in quickly and easily.
The acidity is gentle, sweet and sour, and the complexity of the latter half is a nice accent 🎵.
Today, we had fried rice, dumplings, and stir-fried young chicken with chives 💮.

The mouthfeel is quite delicate, with a thin line. The taste is clean and clear, almost like water, but with a dignified sweetness and deliciousness.
It is indeed a light and dry sake, typical of Niigata.
