Posting No. 475. I happened to find this at a local Chamber of Commerce event at the brewery. The price was 1,980 yen for a bottle! I didn't hesitate to buy it because of the unbeatable price. The sweetness and acidity are well balanced and there is a good amount of fruity aroma. I will definitely buy it again next year if it is available. Matching with Ate (rice wine) Chanja Fat Sashimi Fried chicken Personal preference★★★★☆

It's not enough to drink by itself, but when served with a side dish, the salty taste of the side dish enhances the sake's deliciousness. It would be delicious warmed up with dried fish. Today we visited Shiwa Sake Brewery, which also ships another brand of Shiwa Sake 😃The brewery owner told us about the different ways of making each type of sake and we even got to taste it at the end of the tour 😋. I bought this limited edition sake from the brewery 🍶. Let's get started. The aroma is of koji and some alcohol, with a hint of rice sweetness. When you put it in your mouth, you first taste the koji flavor, then freshness and a hint of sweetness, along with sourness and umami that spreads in your mouth. It has a clear taste that only freshly squeezed sake can have. I also visited the nearby Shiwa Shrine ⛩️, where the sacred tree is said to be about 1,200 years old. We decided to put the Akanezasu Nouveau to rest and opened a bottle of Hiroki's Akitagio-san, an autumn-only junmai ginjo from Shiwa Shuzo, a well-known Shiwa sake brewery in Shiwa. It has a gentle aroma and a soft mouthfeel. It has a soft mouthfeel, but it also has a crisp and clean taste, which gives a sharp impression as you finish it. The well-balanced taste is delicious 😋. It goes well with both yellowtail and crab👍💕💕 I peeled off the label before taking the picture, so the picture looks like a painting, but I'll call it charming 💦.

I bought it at a liquor store (Ofunato) where I was traveling. It is brewed exclusively for Tastovan, a sake specialty store in the prefecture, by the Shiwa Sake Brewery, which is famous for its "Hiroki" and "Shiwa. The aroma is subdued and the taste is refreshing. It is a bottle of sake with a calmness that is not typical for a sake made from unpasteurized sake.
