I asked for a junmai hiyaoroshi and was surprised to find that it was from the Joyo Sake Brewery. I had just had a tour of the brewery almost 10 years ago.
The tour itself was very interesting, but the sake tasted a bit mediocre, like a second-grade sake, and was not to my liking.
When I drank it again, I found it to be a softer, sweeter sake with a full-bodied, bitter taste that was thicker than I remembered from the last time I drank it.
I wonder if it is the type of sweetness or the lingering sweetness, something I would be happy if it worked a little harder.

This is the first sake I've ever had.
It still has a summery feel because of the lingering summer heat, but it's already the season for autumn sake. Easy to drink and no unpleasant parts. 82 points.

Sweet and sour aroma like apple
Slightly carbonated, with a nose-tingling apple-like sourness and a tingling sensation on the tongue that is quite stimulating. ⚡️
The sweetness is moderate, but you can also taste the rice flavor.
The end is sharp, but there is a slight residual astringency.
I drink it chilled, but when it gets close to room temperature, it tastes less stimulating, and the sweetness of the rice increases!

Tokujiro special junmai sake from Kyoto Joyo Shuzo with pressed sushi. Certified as an everyday drink that you can continue to drink without disgust. I want to bring it home.

I bought Tokujiro's summer sake again this year.
It's a little late to drink it, but it's still delicious.
It is great as a food sake or on its own.
It is easy to find and inexpensive, and I personally would be happy if it doesn't become popular, but I guess it would be better for the brewer to sell it, so it's complicated.
