Yamanokami Yeast is a yeast isolated from the flowers of sasa lilies in the sacred area of the Ojin Shrine. This yeast was given to us by the god of sake.
The aroma of acidity is like cream, cheese, or yogurt. There is also a hint of cemedine.
The color is slightly yellow. Dry and acidic with little sweetness. The kind that makes you want sashimi 🐟.
The mouthfeel is silky - the next day the hit is rounded.

Cup sake brewed in cedar barrels. The water color is slightly golden.
There is no hint of cedar in the nose, but it is faint on the palate... Aroma of cedar?
The taste is good. First there is acidity, then white grape aroma.
It is gradually rich in flavor, and the final taste is bitter and cuts off quickly to set the meal on its feet.

Yatagarasu大吟醸別誂え にごり

Lately I've been drinking sake from Nara, Gunma, Nagano, Gifu, and other sea-less prefectures (as it happens 😅).
So this time I got Yatagarasu 🐦⬛ from Kitaoka Honten, an old and powerful brewery in Nara.
Yatagarasu is a classic type of sake like Yoshino cedar barrel sake, but recently it has been replaced and this one was made by a 30 year old master brewer 😳.
The taste is really Yatagarasu? The flavor is slightly sweet, soft, and modern.
The alcohol content is light at 12%, making it easy to drink and recommended for beginners. It was especially good on the second day of opening the bottle👍.
It may not be enough for those who prefer the classics, but it was a satisfying bottle for me😇.
This one is from Yamadanishiki, and there was a similar label that used Koshihikari, but I wonder how it tastes 🤔.

When I visited Yoshinoyama for the first time in April, I bought this sake on a street lined with many stores. There were quite a few different kinds, and I chose this one after being allowed to taste it.
When poured into a bowl, it is yellow in color. It has a calm taste. It is a taste I have been enjoying recently and I enjoyed it easily. The alcohol content is 18%.
Yoshinoyama was so beautiful.
