Closing out the drinks we had last weekend 😆. Smell good 😌. The Mikotsuru was quite rich and sweet, so I felt a lot of sourness when I took a sip 😳. The more I drank, the more umami and the sourness and aliveness were also good 👍 I can feel the strong aroma of the barrels! Is this a dry wine? and Nobby Well, I guess it's umakuchi. It is labeled 18 degrees, but you don't feel it. I thought it would have been better if it was warmed up to lukewarm 🤔 I thought so later, but I finished it before I realized it 😆. But I drank a little too much from Thursday to the weekend 😓. I'll enjoy a quiet rest day for the first half of this week 😮💨.

Tonight, I'm opening a bottle of the first bottle of Masamune instrument for the weekend dinner because it's so good it's about to run out 💁. Shikishima Light Nigori Nama Sake 2022BY Back on the nigori road a bit, but again it's almost a year old 😅. When I opened the bottle, I could hear the gas escaping with a nice sound. The aroma is mainly chemically aromatic, with a hint of greffle skin and a little bit of maturity. The mouthfeel changes from sourness and citrus bitterness to bitterness, umami, and spiciness. The alcohol content is 18%, so it has quite a punch, but the sweetness and umami from the aging process gives the impression that it is more rounded. It's good that the lees are so cloudy and the umami and richness is so much better 😊.

I bought this sake because of its impressive gorilla label. It is a dry sake with a slightly carbonated mouthfeel, a rice flavor that spreads quickly in the mouth, and a bitter or sour taste at the end. This is the first time I have tasted this sake, but it is my favorite sake.

It is an Aichi sake brewery. This bottle is made from Yume-Ginko, a rice suitable for sake brewing in Aichi. The label reads, "Recommended at room temperature, warmed or lukewarm. This time, it was served cold. The first impression of the taste is sweetness and umami with a graininess. It is not too rich, but rather light and easy to drink. It also has a bitterness that makes it easy to pair with food. It may be interesting to warm it up a little to accentuate the sweetness.

Oeyama ✖️ Shikishima Collaboration Brewing Sake Don't stop #Noto's sake! The Matsunami Brewery in Ishikawa Prefecture was completely destroyed by the Noto Peninsula Earthquake. Currently they are brewing new sake in collaboration with "Shikishima". All proceeds will be donated to the Matsunami Brewery. The brewery was completely destroyed. The rice and yeast are made from "Gohyakumangoku" that was dug up from the ruins. The brewery brewed with 45% Yamada-Nishiki as the yeast. Sake degree +5 Brewed with Matsunami Brewery's passion for reconstruction. Brewery: Ito Co. Ingredients: Yamada-Nishiki Rice Polishing Ratio: 45 Alcohol Content: 17
