Sake drinking party with friends from college started in September last year This is the third time. My friend introduced us to Daimon Hashimoto this time! The owner is from Niigata and insists on Niigata sake. We asked the proprietress to choose the sake to match the dishes! The first sake to be paired with the appetizer was Yahiko Kyokyu Junmai Sake! It is refreshing and easy to drink! The party started with three members, but five of us joined this time! It was an enjoyable evening meeting as we talked about topics other than sake! Now, what will be the next sake? We are looking forward to it! extensive knowledge This is a Junmai-shu version of Yahiko Shuzo's popular standard "Kyoku". A clean, dry junmai sake with a nice sharp taste. Yahiko, which is the divine body of Mt. Yahiko, which is the body of a god. It is brewed with sake rice "Kami no mai" grown in its underground water "Kami no mizu" (divine water). Moromi is carefully fermented at low temperature for a long period of time, just like ginjo. The acidity is kept low and the spiciness is just the right amount to go well with meals. As a sake brewery that serves shrines, we do not brew eccentric sake, but rather small-batch sake in pursuit of "genuine national sake.

To be honest, the 100ml bottle is still a small amount and it takes a short time to finish, so it requires a lot of concentration and is difficult to discern the taste properly😅. Today from this morning, I was watching a local high school baseball tournament on the "Virtual High School Baseball" LIVE streaming service. I appreciate the fact that all games from all over Japan are being streamed LIVE. Fortunately, my favorite team from Niigata Prefecture made it through to the first round, so I'm having a nice evening drink 😊.

Yahiko Sake Brewery in Yahiko Village, Niigata Prefecture. Until now, the main brand of this brewery has been "Koshino Hakusetsu. The brewery is one of Niigata Prefecture's most talented breweries, and it appears that the "Yahiko" brand will be their main brand from now on. This Daiginjo is made from 38% polished Yamadanishiki rice produced in Yahiko Village. In the image, the silver characters are on the left side of the bottle. It is a high-end sake in a price range that I do not usually drink, but I got a 100ml bottle at the sake corner of Yodobashi Camera in Shinjuku West Exit. I also got a bottle of Junmai Daiginjo. It has a dignified dignity in the dry range, and the aroma spreads when you drink it. As the summer heat is in full swing, I try to make the most of vegetables in my dishes and snacks. I prepare nambanzuke, a dish made from deep-fried vegetables, in the morning and refrigerate it so that the flavors soak in and I look forward to it for dinner. This is the third bottle for January delivery. It was February when I chose a day when I could drink slowly. With Ebomaki (rice wrapped in a bamboo leaves). This one is too sweet. The January results of the sake subs I started in January are 2 wins and 1 loss. I think it's a good thing that I'm winning. I'm looking forward to February's sake. I've been curious about this Yahiko Daiginjo from Yahiko Shuzo! This size for this price! I was told that the "Koshinohakusetsu" series, which was the main lineup, was discontinued at the end of last year due to brand renewal. I did not know that. This is the sacred sake brewery of Yahiko Shrine, the highest shrine in Niigata, which boasts the largest number of shrines in Japan. It is also a brewery that has produced many brewers who have gone on to become toji (master brewers). The Izumi-style brewing method, which has been preserved at the foot of Mount Yahiko, a famous mountain in Echigo, has been used to make sake just like "Izumi". Tradition and change. I'll buy it next time I find it. The difficult character for "Yahiko" shines through the luxurious white, gold and silver. The aroma is of crisp apple and rice. The mouthfeel is light and smooth. The palate is smooth, with acidity and a hint of sweetness on the tongue.
