I was going to drink it on New Year's Day 2 years ago, but due to circumstances, the bottle was not opened and it went into hibernation for 2 years 😅.
When I opened the bottle, it was gassed out. The aroma is a clear, cucumber-like ginjo aroma. The taste is gorgeous, elegant rice sweetness, soft acidity, crisp aftertaste, long aftertaste, and the conclusion is perfect 😊.

The extremely polished and beautiful mouthfeel is overwhelmed by the mellow sweetness and dignified acidity that is typical of Omachi. It has no unwanted taste, which is only possible with "Shizukutori" pressed by gravity alone. It is delicious!

This place is great! The brewer uses 100% "Tokkodo Omachi" produced in Okayama Prefecture. The sake is then divided into 18-liter bottles called "tobin" and matured.
Characteristics: It has the complex and powerful flavor typical of Omachi, but has been sublimated to a "water-like clarity" through Jyushiyo's unique techniques.
Pairing Suggestion: For this beautiful sweetness and acidity, the best pairing would be "sweet shrimp sashimi" with its delicate sweetness, or "raw oysters (with a squeeze of lemon)" with its minerality. Since the sake is too beautiful, the best luxury is to keep the seasoning to a minimum!

Pocari for adults. It goes in more smoothly than water, but the fruity sourness that comes afterwards is amazing.
It is so easy to drink that 720ml of it disappears in an instant.

This place is amazing! This is a gem of a sake made from "Yamadanishiki" produced in the special A district of Hyogo Prefecture and polished to 35%. Among the "Nakadori", the "Chogoku" is made from carefully selected portions that ferment particularly vigorously. The unique sterilization and storage techniques used to produce this sake allow it to have both the freshness of a draft sake and the elegance of a daiginjo.
Pairing suggestion: To take advantage of this "fruity acidity," scallop carpaccio or cold vegetables with a little fruit (peach or pear) would be an interesting combination. The potential of the sake itself is so high that it is a work of art that is complete on its own without any snacks!
