I didn't expect to find fried tofu from Definition Mountain, so I want to go back. I thought it was Honmaru because only Jyushidai was expensive, 1,500 yen a glass.
The name was derived from an accidental permission when Tatsugoro Takagi XIV applied to register the trademark, which was later made more widely known by Akitsu Takagi (高木顕統), the 15th generation.
Tatsugoro Tatsugoro XV assumed the name Tatsugoro in 2023.

I was surprised to be able to get a bottle of Jyushiyo 😵.
I often see comments that it is sweet, so I had imagined it to be sweet, but the sweetness is elegant and not too assertive, and the dignified and contoured acidity and umami are beautifully balanced and easily quenched 🟢.
This is certainly delicious. It was delicious no matter how many glasses I drank to make sure 😊.
I'm drunk though.
