When you drink it, everything is crystal clear, yet it is a pleasant sake with just the right amount of assertiveness.

It is surprisingly close to "water" in touch, although one would expect it to be a sweet-amami type that even seems to thicken.
It is extremely light at first, but in the middle part of the bottle, the mild umami of rice is asserted, and the sharpness of the latter half completely resets the taste.
This sense of balance between "lightness" and "umami" is divine.
It is unquestionably delicious. As expected of Jyushiyo.

I found it in the store and my heart rate was racing until I finished paying the bill💓.
It's a rare rare sake in Koyama Shoten.
I had been thinking about when to check it in, but yesterday I watched the Emperor's Cup soccer final. Machida Zelvia, my hometown team, won their first major title 🏆.
Today I opened the rest 🍶 from a small batch at noon.
It still has a slight gassy feeling and is fresh and delicious!
The aroma is a gorgeous, fruity ginjo aroma.
The gasiness is firm.
In the mouth, it has the round and gentle mouthfeel that only Junmai Daiginjo can produce, sweetness and umami, with moderate acidity and slight bitterness that gives it a juicy taste. On top of that, it is fresh and delicious with a sense of gas. 😋😋😋😋😋
The sweetness and spiciness are medium.
Rounded happiness spreading in the mouth. Jyushidai is still great!
