Hakushu, the village of famous water. A limited edition junmai hiyaoroshi sake brewed with water from the Kaikomagatake mountain in the Southern Alps.
Junmai sake brewed in spring is matured at a low temperature to preserve the freshness of the freshly pressed sake, but with a soft, square texture.
The fruity aroma coexists with the mild flavor of rice that is typical of hiyaoroshi. The aftertaste is refreshing!
It has a fresh and mild aroma, and when you take a sip, you can feel the mellow mouthfeel that is typical of hiyaoroshi and the mild umami that reminds you of summer maturity 🍁 It also has an elegant aftertaste like apricot, which is very delicious! I love this so much with food!
When I asked for a recommendation, Nanaken's hiyaoroshi came up!
It was a change from the autumn sake we had just had, with a light and refreshing taste, more like the umami of rice than sweetness and flavor! It tasted more like rice flavor 😋✨.
However, I was already on the verge of drunkenness, so I could not give a detailed review, but I was drinking it while saying it was delicious. ☺️
