The taste is 70% shaved, but the impression is clean and beautiful, and it is very well-balanced and easy to drink.
As is typical of hiyaoroshi, the freshness of new sake is rounded out, and the fruitiness of apricots and chestnuts is harmonized with a mildly matured aroma.

At the Diners Club 65th Anniversary Sake Tasting. Very gorgeous from the nose, with a pleasant sparkling crackle and sweetness. I was told that it had been stored in oak barrels, and I could taste the bitterness that comes from that afterwards. I learned a lot about this type of sake, which I usually don't encounter in my daily drinking.

Always delicious Shichiken's limited Junmai Hiyoroshi = Junmai sake brewed in spring and matured slowly at low temperature.
The fruity aroma coexists with the mild flavor of rice that is typical of hiyaoroshi,
It has a moderate sense of maturity! It will go well with today's autumn swordfish!

Refreshingly dry and crisp
The first impact of its gorgeousness is in the ginjo class.
I paired it with yakitori (grilled chicken). The sauce is as rich as the chicken.
The taste is beyond the regular class. As expected of Hakushu water (personal opinion).
I would like to try a higher grade.
Aromatic yet firm rice flavor. The taste is sweet on the palate. But there is no lingering aftertaste.
It is very easy to drink, and even those who do not like sake can enjoy it.
Personally, I think it is the most cost-effective sake.
I bought it four years in a row. It's a cheap and tasty one.
My first hiyaoroshi has been Nanaken.
I drank it in August when it used to be in September. I think it is getting earlier every year, just like the rice harvest.
Now the taste. This year, it has a little more sweetness and umami, and after the acidity, it has a nice dryness to it that gives it a nice kick. As usual, it is a little vigorous and not completely square, but I personally like that taste.
Thank you for the food again this year 😄.
