The name "Soyo" is said to be derived from the character "Sou", which has been inherited by the head of the family for generations. Incidentally, the current head of the family has not assumed the name.
It is said to be dry, but it is not. You can feel the spiciness when you swallow it. But it is rather sweet. There is a hint of cherries in the aroma.
The liquid is clear, with two or three clear legs.
This is the 618th one-cup, one-pack festival.

This is a soul food of Yamaguchi Prefecture that spread from school lunches👍.
Fried chicken and fried burdock root are dipped in a sweet and spicy sauce,
Souhyo is a sake that I became fond of after visiting Mashiko in Tochigi Prefecture in the first half of GW last year.
It may be due to the characteristics of the brewing water,
It has a refreshing taste with umami inside.
I found myself buying a four-pack of it,
It is definitely a good sake from a good brewery.

While rummaging around the sake shop, I found Soyojo's Namahyorashi Hiyayogoshi ✨.
I bought it because I like Soyojo's Namahashiro sake.
I chilled it in the fridge and opened the bottle!
The aroma is not so much fruity as it is mildly acidic. It is my favorite aroma.
Compared to Souhyo's previous sake, Nama Hashimoto Junmai Nama Hashimoto 70, it has a lighter and cleaner taste, probably due to the difference in polish and the alcohol content.
However, the lingering taste is pleasant ✨.
There is no bitterness, and the delicious aftertaste is wonderful.
After a while, when the temperature rises a little! A full-bodied flavor emerges. This is my favorite sake yeast flavor 😊.
It is a nice sake that you can enjoy the changes.

We slipped in and waited 10 minutes for a table at Tanakaya, Akashi's first standing bar in a while.
The entrée was octopus stew and sashimi (octopus, sea bream, and Spanish mackerel).
The taste was robust and the aroma was strong with alcohol.
I expect it will be more fragrant when heated up.

August 4th Tochigi Sake 🥰.
This is the first time to drink Souhyo at home.
The aroma is slightly mature, but when you drink it, it is surprisingly fresh and sweet. There is also a good amount of acidity. It tastes like Western-style sake and has a mango-like taste in the depths.
Even days after opening the bottle, you can still hear the sound of the bottle being opened.
Tochigi love 🥰 both off and at home drinking.
We currently have 3 bottles of Tochigi sake in stock 😌.
