This is the first Souhyo. Junmai Daiginjo brewed with Gohyakumangoku from Tochigi Prefecture. From the label, it is a summer sake.
There is nothing strange or sharp about this sake, and you can feel the umami and sweetness of the rice straight away. It is a good sake that leaves a good impression.
This sake balances the fresh aroma from ice storage with the richness of Souhyo, a local favorite.
It has a pleasant taste that spreads on the palate with a crisp aftertaste. It can be enjoyed as a food sake. Serve chilled in summer. We also recommend heating it up to 40-50 degrees in the early fall.
