It is not the standard Junmai Daiginjo that you would expect. The shuzo has placed this wine for aging since summer, making the ingredients smell and taste become stronger. It comes with more of raw and cooked rice on nose, and slight umami. Texture is richer than the standard ones you expect from this kind of sake rice. Interesting sake to drink in Autumn!

I was sorting through my photo data for a while and found that the one I drank at the end of August was not uploaded, so I'm posting it here after the fact! I'll post them 😁.
The restaurant we went to was a sushi restaurant called "Shinmei" in Morioka.
The owner and general manager here is a woman.
However, it is a popular edo-mae sushi restaurant, so reservations are hard to come by.
The sake we were served was Souhyo, a Tochigi Prefecture sake.
It has a low alcohol content of 13 degrees, but it has a certain impact on the tongue and goes well with the strong flavors of the dish.
I paired it with fried fish.
It was delicious! 😀

Since Shinmei-san has a lot of Junmai (pure rice), I feel that the food goes well with the robust sake.
But that doesn't mean it has a strong flavor.
I would like to try other brands of Sohyo. 👍
