I was able to get three bottles of Tagaji, which I had hoped to obtain.
Citrus aroma. Slightly bubbly. Mild juicy sweet flavor. Well balanced with sharp acidity, a bit like a dry type white wine with a little strong acidity.

It has a crisp and refreshing flavor and acidity. It also has a green apple fruitiness. It is sharp and has a gaseous feel from direct pumping. It is like a food sake that you never get tired of drinking, but surprisingly, it asserts its presence depending on the food with which it is paired.

The bottle was opened because of an interest in Omachi Yamahai Junmai.
When served cold, it has a sourness typical of Yamahai and a tangy, gaseous stimulation.
When heated, the acidity rounds out and the umami and bitterness are more pronounced.
I have the impression that both Ishichi and Tagaji will appeal more to the sake connoisseur or core sake lover than the beginner.
This is what local sake is all about 🤔.
Personally, I had an image of Omachi sake as sweet and tasty, but the two bottles I drank today were refreshing because they had a firm acidity and bitterness.
Moreover, in Tagaji, it was an unfiltered, fire-aged sake, a specification I had never tasted before.
Sake, after all, is a profoundly deep drink!
A cup of sake on a trip to Kurashiki. It seems that Okayama is sweet even though it is described as dry! I got the recommendation for dry at this restaurant! It was delicious with Tsuyama's famous Yomenakase!
I also bought a Daiginjo sake called "Ah" as a souvenir, so I am looking forward to drinking that too.
Tropical Smoky
The refreshing mouthfeel is followed by sourness and a distinctive tropical sweetness. From there, a strong smoky, woody overtone rises and finishes with a slight lingering sweet bitterness.
My favorite brand in Okayama. Once again, it is delicious.
