Mitsuo Yamakawa is an ambitious unit formed by four breweries in Yamagata Prefecture. Named after the first letter of each brand name, the name was brought to life.
Yamagata Masamune, Tatenokawa, Toko, and Otokoyama.
The brewer in charge this time is Tadenokawa Shuzo.
It is brewed with revived ancient rice "Sobei Sousho",
It is a Junmai Daiginjo with a polishing ratio of 50%.

Today's second sake was the second sake made with Sobei Sousei, following Tatenokawa Shuzo's Junmai Daiginjo-shu Shield (2022/10/22).
It has a slightly peculiar taste, perhaps due to the rice used to make it, but it has a good balance of acidity and bitterness, and the umami of the rice is unique...but when served with snacks, it mellows out and is the perfect sake for a mealtime drink🥰.
The only one left is "Yamakawa Mitsuo" brewed by Otokoyama Shuzo...I can't wait to try it 🤔.

We had it at the Kansai Sake-no-Wa New Year's party, and my husband bought it for me in bottle #4 😊.
The brewery that brews this 2050 universe's star brew is "Yamagata Masamune". The lactic acidity comes first. It has a refreshing taste like calpis juice, with a citrus flavor that develops from the middle to the aftertaste, and finishes with a pleasant gaseous sensation that is refreshingly tight. This is really delicious 😋💕.
I didn't like the humidity and heat of the rainy season, so I served it with grilled and soaked summer vegetables, and I thought it would be a perfect match. It was such a good match 👍💕.
