This is a commemorative sake for the 100th anniversary of Jizakeya Miyajima, a sake store in Shinshu. This is the 100th anniversary commemorative package of Jizuya Miyajima, a sake shop in Shinshu, featuring 7 sakes brewed by a female toji in Shinshu.
The fifth of these is "Koten" (高天).
This sake is brewed by Mie Takahashi, the toji of Koten Sake Brewery.
Sorry, I had never heard of Kouten before😅.
Takaten Shuzo was founded in the Meiji era.
The brand name "Kouten" is derived from the brewer's ancestor's family name "Kouten Ryohashi Zenshimon" (高天良橋禅定門).
It was the first brewery in Nagano Prefecture to win the honorary award at the National Sake Competition in 1928, and is a historical brewery that laid the foundation for Shinshu sake.
The ideal sake is "round and slippery.
Slippery" means "slipping down the throat" in the Suwa dialect.
Mie Takahashi is the Suwa Toji, and her husband is the brewery president.
Ninety percent of the sake produced is consumed locally, and only 10 percent is shipped out of the prefecture.
That's why you don't see them around.
This sake has a fruity aroma.
It has a gentle fruity aroma.
The fruity sweetness is balanced by a dry acidity.
The umami underpins the flavor, and the hints and aftertaste are quite koji-like, giving it a unique taste.
The strength of the rice and koji can be felt in this sake 🌾.

I'm not sure if you get my meaning of "slippery" or not. I can understand the feeling of being slippery and not getting stuck, but this is the first time I've heard of the expression 😳Goten, I've never seen them for sale, so it will be hard to come across them outside of the prefecture 🤔.

Medaka (Japanese killifish) greeted us at the sales floor. It is said to be the second most shipped sake in Takaten. It is also sold at supermarkets.
